10 Minute Molten Chocolate Espresso Cake



 If you've decided to stay in and create a romantic evening at home this Valentine's Day, here's a super easy dessert that will knock your dates socks off! And best of all, it only takes minutes to make!
Here's what you'll need...


INGREDIENTS:
  • 8 ounces room-temperature butter, cubed
  • 8 ounces dark chocolate chopped (chips work too)
  • 3/4 cup all-purpose flour
  • 3/4 cup sugar
  • 1 shot cooled espresso (instant is fine)
  • 1 teaspoon salt
  • 4 eggs
  • 1 pint ice cream, such as vanilla, or salted caramel
  • Dark chocolate for shaving

 INSTRUCTIONS:

In a glass bowl over a double broiler, melt butter and chocolate together (can be done in the microwave for about 60 sec). In a separate large bowl, whisk together flour, sugar, salt, eggs, and espresso. Whisk in the melted chocolate and butter. Pour batter into medium or large coffee cups (or souffle cups, as I used), filling each about half way. Makes 4-6 servings.

Microwave on high for 50 seconds to 2 minutes, depending on your microwave and desired consistency.  Allow to cool for 30 seconds, then top with ice cream and shaved chocolate, or desired topping.
